Despite the market being flooded with fake and adulterated ghee, people in India know when their ghee is not really authentic. Sometime in their life they have eaten ghee made by their grandmother or Mother. They may have experienced it while visiting some rural part of India during vacation. Point being, ghee is an important part of our our Indian diet and we Indians know and love our ghee.

The biggest difference in the commercially available ghee and real desi ghee is that the commercial ghee sold in stores is made with malai. Malai is heated and it is called ghee. But the real ghee requires a lot more effort and procedure. It is actually made from curds! 

How is real desi cow ghee made?

Traditional way of making desi cow ghee is as follows:

1. Boil the raw fresh milk

2. Set curds using a culture of your choice

3. Churn this curd using a wooden bilona

4. Separate the makkhan and buttermilk

5. Heat the makkhan until milk solids settle and ghee is ready
